Lavender water has many scent nuances because this water (or hydrolate) contains many different components than lavender oil. It is in fact the second product of distillation. Lavender water, as well as other hydrolates, contain hardly any oil-soluble molecules that are present in an essential oil. For example, lavender oil contains many esters that are responsible for the scent. Lavender water lacks this component so it smells less like lavender. This wonderful water tones, cools and strengthens the skin.
