Sunflower seed oil is one of the most 'multi-functional' fatty vegetable oils. Cold-pressed sunflower seed oil contains a high percentage of polyunsaturated fatty acids, is neutral in smell and taste, and is relatively inexpensive.
The sunflower is an annual plant up to 3 meters high with a straight stem and large yellow flowers with a brown center. In fact, a single sunflower consists of 3000 flowers. It is this species that is cultivated for its oil-bearing seeds. These seeds - more than 1000 per flower head - are usually light black-and-white striped, although other colors also occur.
